Easy Pasta Salad

This recipe is for an easy and delicious pasta salad, perfect for any occasion. It combines al dente pasta, peas, hard-boiled eggs, sweet relish, and red onions, all tossed in a homemade creamy dressing. Just prepare, chill for an hour, and serve this crowd-pleasing dish.

Ingredients
  

  • 8 ounces your favorite pasta (penne, rotini, bow tie, etc.)
  • 1 cup frozen peas thawed
  • 1/2 cup sweet relish
  • 1/2 red onion thinly sliced
  • 4 hard boiled eggs chopped

For the dressing:

  • 1/2 cup mayonnaise
  • 2 Tbsp lemon juice
  • salt and pepper to taste

Instructions
 

  • Cook the pasta according to the package instructions until it's al dente. Rinse under cold water and drain well.
    8 ounces your favorite pasta (penne, rotini, bow tie, etc.)
  • While the pasta is cooking, place the frozen peas into a strainer and run warm water over them until they are thawed.

  • In a large bowl, combine the cooked pasta, thawed peas, chopped hard boiled eggs, sweet relish, and thinly sliced red onion.
    8 ounces your favorite pasta (penne, rotini, bow tie, etc.), 1 cup frozen peas, 1/2 cup sweet relish, 4 hard boiled eggs, 1/2 red onion
  • In a separate bowl, whisk together the mayonnaise, lemon juice, salt and pepper to make the dressing.
    1/2 cup mayonnaise, 2 Tbsp lemon juice, salt and pepper
  • Pour the dressing over the pasta and stir until everything is well coated.
  • Cover and refrigerate the pasta salad for at least one hour before serving.
