Easy Pasta Salad

This recipe is for an easy and delicious pasta salad, perfect for any occasion. It combines al dente pasta, peas, hard-boiled eggs, sweet relish, and red onions, all tossed in a homemade creamy dressing. Just prepare, chill for an hour, and serve this crowd-pleasing dish.

- 8 ounces your favorite pasta (penne, rotini, bow tie, etc.)
- 1 cup frozen peas thawed
- 1/2 cup sweet relish
- 1/2 red onion thinly sliced
- 4 hard boiled eggs chopped
For the dressing:
- 1/2 cup mayonnaise
- 2 Tbsp lemon juice
- salt and pepper to taste
Cook the pasta according to the package instructions until it's al dente. Rinse under cold water and drain well.
8 ounces your favorite pasta (penne, rotini, bow tie, etc.)
While the pasta is cooking, place the frozen peas into a strainer and run warm water over them until they are thawed.

In a large bowl, combine the cooked pasta, thawed peas, chopped hard boiled eggs, sweet relish, and thinly sliced red onion.

In a separate bowl, whisk together the mayonnaise, lemon juice, salt and pepper to make the dressing.

Pour the dressing over the pasta and stir until everything is well coated.
Cover and refrigerate the pasta salad for at least one hour before serving.
