Mini Banana Chocolate Chip Muffins

- 1 cup ripe mashed bananas 2 – 3 medium bananas
- 1/4 cup melted butter
- 1 each large egg
- 2 tsp vanilla extract
- ⅓ cup maple syrup or granulated sugar
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup chocolate chips
Instructions
- Preheat your oven to 350° F (175°C) and spray your mini muffin pan with cooking spray.
- In a bowl, combine the bananas, melted butter, egg, vanilla extract, and maple syrup (or sugar).1 cup ripe mashed bananas, 1/4 cup melted butter, 1 each large egg, 2 tsp vanilla extract, ⅓ cup maple syrup or granulated sugar
- In another bowl, mix the flour, baking powder, baking soda, and salt.1 ½ cups all-purpose flour, 1 tsp baking powder, ¼ tsp baking soda, ¼ tsp salt
- Gradually, add the dry ingredients to the wet ingredients, stirring until just combined.
- Stir in the chocolate chips, making sure they are evenly distributed throughout the batter.½ cup chocolate chips
- Fill each muffin cup about ¾ full with batter.
- Bake for 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool the muffins for about 5 minutes before enjoying.
