Mini Banana Chocolate Chip Muffins

This quick and easy recipe for Mini Banana Chocolate Chip Muffins is perfect for busy mornings and combines flavors of bananas and chocolate for a tasty snack.

Ingredients
  

  • 1 cup ripe mashed bananas 2 – 3 medium bananas
  • 1/4 cup melted butter
  • 1 each large egg
  • 2 tsp vanilla extract
  • cup maple syrup or granulated sugar
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup chocolate chips

Instructions
 

  • Preheat your oven to 350° F (175°C) and spray your mini muffin pan with cooking spray.
  • In a bowl, combine the bananas, melted butter, egg, vanilla extract, and maple syrup (or sugar).

  • In another bowl, mix the flour, baking powder, baking soda, and salt.

  • Gradually, add the dry ingredients to the wet ingredients, stirring until just combined.
  • Stir in the chocolate chips, making sure they are evenly distributed throughout the batter.
    ½ cup chocolate chips
  • Fill each muffin cup about ¾ full with batter.
  • Bake for 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Cool the muffins for about 5 minutes before enjoying.
